Ingredients

  • 350 g pasta
  • 2 tbsp olive oil
  • 3 garlic cloves, sliced
  • 700 g crushed tomatoes
  • Handful of basil leaves
  • Pinch of chilli flakes, optional
  • Salt and grated cheese

Method

  1. Cook the pasta in well-salted water until al dente. Reserve a cup of cooking water.
  2. Gently cook garlic in olive oil without browning.
  3. Add tomatoes and simmer for 15 minutes.
  4. Toss in the pasta, basil and enough cooking water to loosen the sauce.
  5. Finish with cheese and black pepper.
Useful tip: Reserve the pasta water before draining—it helps the sauce cling.
