Slow-Simmered Beef Stew

Ingredients

  • 900 g stewing beef
  • 2 tbsp flour
  • 2 tbsp oil
  • 1 onion
  • 3 carrots
  • 500 g potatoes
  • 2 tbsp tomato paste
  • 1 litre beef stock
  • Thyme and bay leaf

Method

  1. Season beef, dust lightly with flour and brown in batches.
  2. Cook onion and tomato paste in the same pot.
  3. Return beef, add stock and herbs, and simmer gently for 90 minutes.
  4. Add carrots and potatoes and cook until tender.
  5. Season and rest briefly before serving.
Useful tip: Deep browning builds flavour; do not rush the first step.
