Method

  1. Whisk flour and eggs, then gradually add milk until smooth.
  2. Whisk in butter and rest batter for 20 minutes.
  3. Heat a lightly buttered pan and pour in a thin layer.
  4. Cook until the edges lift, flip and briefly cook the other side.
Useful tip: Resting lets the flour hydrate and makes the crêpes less likely to tear.
